Ingredients:
300 grams of medium-sized SSP white shrimp
15 grams of cooking wine
5 grams of salt
5 grams of black pepper
60 grams of cornstarch
200 milliliters of oil
60 grams of bread crumbs
30 grams of minced garlic
20 grams of chili peppers
20 grams of fermented black beans
20 grams of chopped green onions
Directions:
Step 1
Peel the shrimp by making a cut along the back to remove the vein and the digestive tract. Marinate them with cooking wine, salt, and black pepper for half an hour.
Step 2
Then, coat the shrimp evenly with a layer of cornstarch. Heat oil in a pan to about 70% of its temperature. Fry the shrimp until they turn golden brown. Remove them from the oil and fry them again for a second time.
Step 3
Next, coat the shrimp with breadcrumbs and fry until crispy. Fry the minced garlic until it turns golden brown and set it aside.
Step 4
Stir-fry the chili peppers and fermented black beans until fragrant. Add the breadcrumbs and minced garlic, stir well, then add chopped green onions, shrimp, and salt. Stir-fry for one more minute.
Step 5
Plate the dish and it’s ready to be served.
