Shrimp Avocado Toast

Ingredients:
4 lemons, cut in half
1/2 Lb shrimp
4 slices Grain Bread
1 large Hass avocado, mashed
1/2 red onion, thinly sliced
1/4 Tsp salt
1 Tbsp olive oil
Directions:
Step 1
Squeeze the juice of 2 lemons into a bowl. Add the shrimp and let them marinate for 15 minutes.
Step 2
Heat olive oil in a pan over medium heat. Cook the marinated shrimp for 3 minutes until they turn pink. Remove from heat and set aside.
Step 3
Toast the slices of grain bread until they’re golden and crisp.
Step 4
In a separate bowl, mash the Hass avocado and mix in the juice of 1 lemon to prevent browning. Add a pinch of salt and stir to combine.
Step 5
Evenly spread mashed Hass avocado onto each toasted bread slice, top with cooked shrimp, and scatter sliced red onion. Squeeze lemon juice over the assembly and add a pinch of salt for seasoning.
Step 6
Season the toasts with a pinch of salt. Serve the avocado shrimp toasts and enjoy!
